FOLHA
DE UVA - www.folhadeuva.com
In 1901, Mr.
Elias "Hallab" Cauerk, a lebanese immigrant who brought with him the knowledge
of the lebanese cooking, arrived in Brazil.
This was the
beginning of the oldest and best Arabian restaurants in the country: the Folha
de Uva (the Grape Leaf).
Today the
restaurant is managed by Samir
Cauerk Moysés (Grandson of the founder). The
secret of the success and quality of the restaurant is due to the fact that Mr.
Samir constantly travels to his native land to improve Mr. Elia's traditional
recipes, besides researching and looking for new dishes to enrich the menu which
already contains more than 50 options. The "Quibe Cru" (Raw Quibe) which is made
of fresh meat with no fat is the most outstanding.
Another dishe
that must be mentioned is the "charuto de folha de uve". For those who like a
quick snack, there is the cheese kafta (a grilled kafta with melted muzzarela
cheese, rolled up in Syrian bread, besides, of course, the traditional "Beiruths".
