The cooking of Maranhão is abundant. Surrounded by swamps, fish and sea food are a daily dish for the people of São Luís. And, of course, these are the specialties of the restaurants. In São Luís, the food is abundant and the seasoning, very peculiar, is usually light in spite of the strong Portuguese, Indian and African influence. The cuxá, an African spice made of a type of sour leaves, is very popular in seasoning fish, fried or cooked.

The principal dishes are the fish with sauce of Maranhão, The Kettle of Shrimp, using White Shrimp which is abundant in the littoral and the Shelled Fish Pies, fished in the swamps of the island. Don't miss trying the local desserts, like the iced creams of the native fruits and the homemade jams. Now, if you are in a small bar, the crabs are a tasty appetizer to go along with a good cold beer.

Talking about this, the locals drinks are just as diversified as the food. The liquor and pinga of regional fruits, like juçara (açaí), bacuri, cupuçú, sapoti, graviola, jenipapo and murici are scattered around all the bars of the city. However, the most exotic of all the drinks is the soft drink of Guaraná Jesus: created in 1920 by a sailor, the "Rose-Colored Dream" has a cinnamon taste and makes as much success as the bumba-meu-boi, drum-of-Creole and the reggae. Its drink is more sold than Coca-Cola.
