    The cooking of Maranhão reflects the diversity of its people, who mixed the european, indian and african culture, to originate so many dishes with exotic but unforgettable flavors. Maranhão has the 2nd longest seaside of the brazilian coast, so it’s not surprise to have seafood as main ingredients of its typical dishes.

    The most traditional dish of São Luís is "arroz de cuxá", followed by coconut milk fish stew and "caldeirada de camarão e peixe" (boiled fish and shrimp). The colors and the remarkable taste of most of the dishes is a reflex of the spices used without much care by the region cookers. In São Luís, also try the taiobas and pescadas, accompanied always by fried crab, shrimp, oysters, shellfish and other spices. To complete the meal, nothing better than inhame, jerimum and quiabo.

    Regional fruits are the main ingredients to sweets, specially jack and cashew, besides also being part of the famous and delicious liqueurs produced in the region. One of these beverages calls attention for being liquor made from cassava, which has a blue tone. It’s also part of the local culture to consume liquor and catuaba.

    All these elements can be found in the "bases", which are typical restaurants of the city, usually set up in house gardens or residential rooms.
